Chia seeds were once a staple of the Incan, Mayan and Aztec cultures, along with the Native Americans of the southwest. "Chia" is actually the Mayan word for strength. The seeds were used by these ancient cultures as mega-energy food, especially for their running messengers, who would carry a small pouch of it with them. Chia gives an incredibly 'sustaining' surge of energy.
Chia possesses the highest percentage of polyunsaturated fatty acids of all crops, containing a whopping 60% omega 3 fatty acids. They have among the highest antioxidant activity of any whole food -- even more than fresh blueberries. In fact, Chia is so rich in antioxidants that the seeds don't deteriorate and can be stored for long periods without becoming rancid. Furthermore, they do not have to be ground to make their nutrients available to the body, making this one of the most nutrient dense, bio-available foods ever!
Because Chia seeds have a neutral flavor, they can be sprinkled on fruit and salads, or any savory dish. When mixed with water, chia forms into a thick gel. It absorbs 9-12 times its weight in water, so be sure to hydrate it well. This can be eaten plain, or mixed with anything you can imagine.
